Like humans, fruits and vegetables respire. They absorb oxygen (O2) and release carbon dioxide (CO2). Numerous studies have shown that a storage environment with lower oxygen levels reduces respiration in fruits and vegetables. This, in turn, delays ripening and aging, allowing produce to be stored longer while maintaining its flavor and quality.
Controlled Atmosphere (CA) is a storage technique that adjusts the ratios of gases (CO2, O2, N2, etc.) by lowering O2 and increasing CO2 and N2 to suitable levels to minimize the respiration of agricultural products. This helps maintain quality, flavor, and extend storage life. Additionally, harmful insects are naturally managed without the need for any chemical preservatives.
Under CA conditions, agricultural products can be stored 2-4 times longer than under conventional cold storage conditions.
