Why is CA storage considered a clean preservation method?

Did you know that the world has applied the CA method to preserve a wide variety of products, not just fruits and vegetables? All kinds of processed foods, from snack packages to milk bags, beverage bottles, and beer cans, use this method to extend their storage life.

This method simply involves replacing or minimizing O2 in the environment with N2 or CO2 (depending on the characteristics of the product to be preserved). These are gases naturally present in our atmospheric environment. They help eliminate O2, which is an ideal environment for microbial growth, keep the product crisp, inhibit respiratory and metabolic processes that reduce quality, and cause product spoilage. Because this method only changes the atmosphere composition in the preservation environment without using chemicals, it is naturally considered a clean preservation method.
